WACKY CAKE 
This cake is so easy and fun to make that you'll be tempted to save on dishes by preparing it in a disposable 8 or 9-inch square pan so that you can make it more often.

There are no mixing bowls to worry about, since the cake is mixed directly in the pan.

1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup cocoa
1/2 teaspoon salt
1 tsp. baking soda
1 teaspoon vanilla
1 tablespoon white vinegar
1/3 cup vegetable, peanut or light olive oil
1 cup cold water, milk or chocolate milk

Preheat oven to 350°F.

Grease the pan well with Crisco or vegetable shortening.

Measure the flour, sugar, cocoa, salt and baking soda into the pan. Using a fork or whisk, stir all ingredients until no streaks remain and everything is well combined.

Scoop out three holes or valleys in the flour mixture. Pour the vinegar into the first hole; the vanilla into the second hole, and the oil into the third. Sometimes I add a pinch of Jamaican allspice and a few drops of rum.

Pour the water or milk over everything and stir with a fork or whisk until everything is well blended. Don't forget to stir in the corners of the pan and the edges!

Bake 35-40 minutes. Cool 5 minutes and cut into squares.

Serve while still warm with ice cream or whipped cream to top it off. Or simply brush with melted butter. A drizzle of melted chocolste can dress up this cake for unexpected guests.

As quick and simple to prepare as a mix, but much more economical and without the long list of chemical ingredients, this recipe has been a "Keeper" since the 1940's. My mother was given this recipe in the 60's and was called Crazy Cake. With 7 children, this was a quick dessert for us.

This is the first thing I learned to make as a child and later taught my kids. I learned later that it originated during WWII when eggs and dairy products were rationed. Making the three dents in it is fun for kids (and adults) and they can learn a little science while watching the chemical reactions of the soda when vinegar is added. Recipe works well doubled in a 9x13-inch pan too, just have to watch bake time.

My granddaughter is allergic to eggs and milk. I had this recipe, which calls for water, and made this cake when my daughter was growing up. She now uses it to make my granddaughter's birthday cake and when she wants a dessert that the whole family can eat. They all love it.

My mother always made this cake for my twin sister and mine birthday. It was called Wacky Cake an imagine my surprise to find this recipe on here. I made if one Sunday when the pantry was getting bare... It turned out fabulous and everyone enjoyed it!

My mom makes this Wacky cake with a chocolate frosting and serves it with cherry jello, it is the best. We had it all the time when I was a child and she still makes it when we all get together.

I made this, without the cocoa (we were all out) and I made a simple peanut butter icing to top it - it is phenomenal! My husband went gaga over it. So then, I made the cake again and this time replaced the cocoa with a creamy peanut butter/milk recipe and topped it with the peanut butter icing. Both times, it turned out fabulous! It's a very versatile, simple recipe, and I think it'll be staple for us from now on!

My mom handed down this recipe many years ago as well. Also, explained about rationing during WWII. However, I use a cup of coffee for the liquid. I frost with buttercream icing.
