MAMASITA'S MEXICAN MEATLOAF 
LOAF:

2 lb. ground beef
1 (10 oz.) can Rotel tomatoes
1 pkg. taco seasoning
2 eggs
1 cup corn chips (crumbled up)

Preheat oven to 375°F.

Mix together loaf ingredients and form into loaf pan. Bake at 375°F for 45 minutes.

Remove from oven and drain grease off.

SAUCE FOR TOPPING:

1 (8 oz.) can tomato sauce
3 tbsp. Salsa or Picante sauce
1/2 tbsp. Cajun seasoning (Tony's)

Mix sauce ingredients together while loaf is baking. Spread sauce on top and bake another 10 to 15 minutes.
