SPICY MEXICAN MEATLOAF | |
This is a fantastic way to add excitement to what could otherwise be considered a boring meal. 12 oz. pkg. spicy pork sausage (your favorite) 1 lb. lean ground beef 1/2 cup corn flakes 3/4 can Pringles chips (I use Salsa Verde flavor) 1 egg 2 tbsp. chili powder 1 tsp. cayenne pepper 1 tsp. garlic powder (optional) 1/2 cup shredded cheddar cheese 1/4 cup salsa OPTIONAL GARNISHMENTS: dairy sour cream guacamole salsa Fry pork sausage and ground beef until it is about half cooked, drain and set aside to cool. Mix together and finely crush Pringles and corn flakes Thoroughly mix together all ingredients except cheese and salsa and form into a loaf inside a greased baking dish. Bake at 325°F for 45 minutes. Cover with cheese and salsa and bake an additional five minutes. Serve topped with your choice garnishments, if desired. Submitted by: Alan Hantke |
