CM'S SPINACH ITALIAN STYLE | |
This is how my mother taught me how to cook spinach, and this is how I prepare it most of the time. 1 lb. fresh spinach, washed, drained 4 or 5 large cloves garlic, minced or thinly sliced 1/4 teaspoon hot red pepper flaked 2 slices salt pork, cubed 1/8 inch dice 2 tablespoons extra virgin olive oil Sauté the salt pork (you can also substitute bacon, pancetta or ham, but salt pork provides the best flavor). When salt pork becomes translucent and renders out, add 1 tablespoon olive oil, hot pepper and garlic; sauté one or two minutes and add the freshly washed spinach. Stir, cover for 2 minutes, stir again and repeat until spinach has wilted down partially. Add another tablespoon of olive oil (if needed) and season to taste with salt and pepper before serving. Note: Depending on whether you are using baby spinach or large, older leaves, you might need to adjust the cooking time, but be careful not to overcook. Infrequently, I might add a few drops of hot sauce or lemon juice, but it really doesn't need it. Swiss Chard or other greens can be made in the same way. Submitted by: CM |
