CORN FLAKE CHICKEN
4 boneless, skinless chicken breasts
1 c. mayonnaise
1/3 c. mustard (brown or Dijon)
2 c. corn flakes

Wash and dry chicken breasts; set aside. Preheat oven to 400 degrees. Mix mayonnaise and mustard in shallow bowl. Coat chicken breasts one at a time with mayonnaise and mustard mixture.

After coating, cover with corn flakes by turning chicken in a bowl of the corn flakes. Bake at 400 degrees for 15-20 minutes. You can make a dipping sauce for the cooked chicken by blending mayonnaise and mustard in a 3:1 ratio or to your taste. The hot chicken and cold dip is really good!

OMG!!! My whole family--ages 9 to 59-- loved this recipe!! We made a dipping sauce of 3:1 prepared mustard and raw honey--delicious! We added olive oil to the pan so that it didn't stick. The little ones were scrapping the crumbs from the pot.
