EASY GROUND BEEF AND POTATO
CASSEROLE
 
1 lb. ground beef
Salt and pepper to taste
1 sm. onion, sliced
4 med. potatoes, sliced
1 green pepper, sliced
1 can cream of mushroom soup

Brown ground beef with salt and pepper in skillet, stirring until crumbly; drain. Place in one quart casserole. Layer next three ingredients over ground beef. Top with soup. Bake covered, at 350 degrees for one hour or until potatoes are tender.

I used cream of celery instead. We have a mushroom allergy in my family. I would imagine cream of asparagus would be good also. This recipe is FABULOUS!!

I added green onions and sliced mushrooms to mine to clean out the fridge. Once the dish was finished cooking I added cheddar cheese. Great meal!

This was yummy, but... Were we supposed to add a can of water to the soup? I did not add water. The potatoes took longer to cook and still were a bit crunchy after cooking longer.
