SCONES 
2 cups flour
3 tablespoons sugar
1/2 cup raisins, or currants
3 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1/2 cup sour cream
1 egg, slightly beaten
3 tablespoons milk

Preheat oven to 425F. In a large bowl, combine first six ingredients.

Add remaining ingredients and mix by hand until dough is uniformly moistened. Turn onto floured board and knead 12 to 15 times. Divide dough into two equal sized balls. By hand, pat each ball into a 6 inch round. Sprinkle each round lightly with sugar. Cut each round into six wedges and place wedges on an ungreased baking sheet. Bake for 10 to 12 minutes, or until done. Serve warm.

I've made these scones about 6 times now. They never bake in the time it says. I bake for 12 mins and they usually still need more time, by then the tops get too dark. I also find the dough extremely sticky and difficult to work with! I usually add almond or vanilla extract for flavour, which might be the reason why the dough is too sticky and difficult. Today I didn't add any extract, dough was much better. But they were still under cooked!

I always add extras like almonds or apples or coconut or all at the same time. Which might effect the baking time? I also usually add some sugar granules on top.

In the past I've cut down on the salt. Today I omitted it completely.

I also always use Greek yogurt instead of sour cream. Today I tried a lemon flavour. Can't wait to see if the flavour comes out. (Reason why I didn't add extracts this time.)

Haven't tried them yet as I put them back in the oven after I turned it off to see if they'd cook up some more.

I also bake them in round loaves since the dough was always too sticky to even attempt to cut.

Over all, I really like this recipe, it's easy and doesn't require butter!
