POTATO AND GROUND BEEF CASSEROLE 
1 lb. ground beef
2 c. canned tomatoes
4 med. potatoes, diced
Oregano, salt and pepper to taste

Slightly brown ground beef in skillet and drain.

Brush bottom of casserole dish lightly with melted butter. Place diced potatoes in bottom of dish. Add drained beef and cover with canned tomatoes. Season with oregano, salt and pepper. Bake at 400 degree for 30 to 35 minutes or until thoroughly cooked.

For variety a small can of sweet peas may be added with potatoes.

This is a useful recipe because it's quick and easy. You might want to microwave the potatoes for a couple of minutes before you put them in because mine still weren't really cooked after 40 minutes. Lots of ways to change it up. I added celery and onion while browning beef. Could try chili powder instead of oregano.

Nothing wrong with this recipe. And yes the potatoes aren't quite done at this time. Drop the oven to 350°F and cover the casserole with foil. Place in the oven for 1 hour, for thicker sliced potatoes may have to cook longer.

I added a layer of finely diced onion over the potatoes - before adding the ground beef & tomatoes. Easy, delicious. A friend removes dish during last five minutes - sprinkles on Cheddar cheese and returns to oven for 5 minutes. Good either way.
