SHRIMP & TOMATO PIE | |
9 x 12" pie shell 3 eggs 1/2 c. mayonnaise 1 tomato, sliced 1 brick sharp cheese 1/2 lb. cooked shrimp Salt & pepper, to taste Grated cheese, to taste Progresso bread crumbs, to taste Sm. onion, sauteed until soft 1 stick butter, melted in pan Parsley flakes, to taste Prick bottom of pie shell with fork. Mix the 3 eggs, mayonnaise, salt and pepper and put aside. Melt butter in frying pan. Saute onion until soft. Cook 1/2 lb. shrimp until pink. Cut in cubes and put aside. Pour in pie shell all ingredients including shrimp (break up cheese). Slice tomato all around top. Sprinkle with grated cheese and bread crumbs and parsley flakes on top. Bake in oven 30 minutes at 300 degrees until top is golden brown. |
