BANANA NUT MUFFINS 
1 c. flour
1/2 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
3/4 c. oatmeal (quick or regular)
1 egg, beaten
3 tbsp. shortening, melted or oil
1/2 c. milk
1/2 c. bananas, mashed
1/3 c. nuts, chopped

Mix flour, sugar, baking powder, salt and baking soda. Stir in oatmeal. Add remaining ingredients. Stir only until moistened. Fill medium-size greased muffin cups 2/3 full. Bake at 400 degrees for about 20 minutes.

These turned out great and were so easy to make. I improvised and used buttermilk instead of plain milk and also used large pieces of walnuts, instead of chopping them into small bits. The oatmeal adds a new dimension to the normal banana muffin and makes them healthier. These will be a regular breakfast treat in my home from now on. I even shared them with a friend. Yummy!

I just made these with my 3 1/2 year old son...and they were easy and really yummy! I used sunflower oil and lite soy milk, and for the nuts, I used ground hazelnuts.

What an awesome recipe! I substituted flour, baking soda and baking powder with buttermilk baking mix and added a little grapefruit zest and they're are moist, sweet, and tasty! The only problem is they're all gone!

Delicious, but I changed slightly. Buttermilk instead of regular milk and I made a crumb topping. Here is the recipe: Mix together 1/2 cup sugar, 1/2 cup four, 1/4 cup butter and 1 and 1/2 teaspoons cinnamon. Mix with fork and sprinkle over muffins before baking. This muffin recipe yields 1 dozen muffins.

We love them. I used the banana nut muffin recipe and added instant apple cinnamon quick oatmeal and cinnamon spice oatmeal and some vanilla, brown sugar, nutmeg, chocolate chips and walnuts. They came out great and went quick.

Want more banana flavor? Do this: add 1/2 tsp. banana extract, add 1/4 cup banana chips marinated in vodka and water for 15 to 20 minutes, add 1/2 package of banana/cream Jello mix. Replace milk with cream -- adjust thickness with some water.
