ITALIAN SAUSAGE SOUP 
1 lb. ground Italian sausage
2 cloves fresh garlic, minced
3 leaves fresh basil
1 can 15 oz. butter beans
1 can 15 oz. black beans
(beans may be substituted with beans of your choice)
1 can 15 oz. diced tomatoes
2 cups beef broth
grated Romano or Parmesan cheese

Cook sausage until brown, add garlic and basil. Sauté 4 minutes.

Add remaining ingredients: beans, tomato, broth.

Cover and simmer 10-15 minutes, then remove from heat.

Serve in soup bowl; sprinkle with cheese and serve with Italian bread, garlic bread or panini bread.

Made this tonight after looking for an alternative to sausage and peepers.Came out great and everyone loved it!! Used hot sausage and 2 cans of beef broth so it was a little more soupy.

Turned out pretty nice. I highly recommend the parmesan cheese or another type of pungent cheese, i.e. gruyere or swiss. I refrigerated mine & skimmed off the top layer of fat to make it a little healthier. I plan on omitting the black beans next time & doubling-up on the butter beans. A yummy and unique soup. I used fresh Lima beans and a can of northern white beans. I used chicken broth (2 cans). I added a bit of cayenne pepper, cumin seeds and anise seeds. I also put in some macaroni. Wonderful soup. My husband said it was a keeper.

This has become one of my family's favorite soups. I make a point to use low-salt or no-salt canned ingredients and the sausage still provides plenty of seasoning and flavor. Also, we tend to skip the bread and sprinkle our favorite croutons on top, along with the cheese.
