VEGETABLE SANDWICH FILLING 
1 (8 oz.) cream cheese
1/4 c. chopped celery
1/4 c. chopped green pepper
1/4 c. chopped onion
1/2 c. grated carrot
1 tbsp. lemon juice
2 tbsp. mayonnaise

Soften cream cheese. Prepare vegetables, if large cucumber, remove seeds. Drain vegetables to remove moisture. Mix all ingredients well. Good on rye bread.
