EASY BANANA BREAD 
1/4 cup (1/2 stick) butter
2 eggs
1 cup sugar
3 bananas, mashed
1 tsp. vanilla
1 1/2 cups self-rising flour

Cream together butter, eggs and sugar until smooth. Add bananas and vanilla; beat well. Mix in flour.

Bake at 325°F for about 1 hour or until golden brown.

Hi Vicki,

Self-rising flour contains the leaveners, so is usually sufficient. Some recipes add baking soda and/or baking powder, but it your self-rising flour is fresh (6 months or less on the shelf) you should need to add anything unless your batter is very heavy.

Self-rising flour has baking powder, baking soda and salt in it already. (That's what differentiates it from all purpose flour, and what causes it to rise).

I made this recipe without the vanilla (didnt have any available) and substituted the 1/2 stick of butter for a 1/4 cup crisco 1 1/2 tsp water. I also very lightly greased the bottom of my pan. The bread turned out beautifully! I'm not sure how long I baked it, I just waited until I saw the golden-brown surface. I would definitely give this recipe a try. It was easy, convenient, and delicious! Kudos :)

I followed the recipe to a Tee, then, like Holly from Florida, added a handful of chocolate chips. Can you say "HEAVEN"?!?!? This was so good, and soooo easy! I had some over-ripe bananas I didn't have the heart to throw out, as I hate to waste money, so I went web surfing for banana bread! Thank goodness this is the recipe I found, as it is super, easy, and SUPER EASY!!!

If your bananas get over ripe and you don't have time to make your banana bread just throw them in the freezer peel and all. They thaw very fast, when needed.

Hello, I tried this recipe. Added a bit more butter, 3 eggs, 1 tsp baking powder and a bit of baking soda because I bake a lot. The recipe turned out great, just make sure you grease the pan and add a bit of flour and shake off any excess flour. It will stick to pan. Enjoy. Bye bye!

I only had 2 bananas so I tweaked the recipe to 1 1/4 cup sugar threw in some cinnamon and also added a tsp of baking powder. I mixed in almonds and chocolate chips because I had them on hand. It was my first time baking a banana bread and it was excellent!

I usually use this recipe but I like 3/4 cup sugar and 1/2 cup brown sugar instead. Also, I like to have banana pieces in the bread so I don't mash the bananas too well. ":)
