DIABETIC MOLASSES COOKIES 
3 c. molasses
3 tsp. baking soda
1 c. shortening
1 tsp. cinnamon
3/4 c. hot water
5 c. flour
1 tsp. ginger
Raisins (if desired)

Mix molasses and soda until light and foamy. Add melted shortening and water. Mix thoroughly. Sift flour, ginger and cinnamon. Add to moist mixture. Refrigerate at least 4 hours, overnight is better. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees until done.
