“BLUEBERRY MUFFINS” IS IN:

BLUEBERRY MUFFINS 
1 egg, slightly beaten
1/2 cup milk
1/4 cup vegetable oil or melted butter
1 1/2 cups flour
1/2 tsp. salt
3/4 cup sugar
2 tsp. baking powder
3/4 cup blueberries, rinsed, or fresh or frozen

Beat egg slightly; stir in milk and oil.

Sift together flour, salt, sugar and baking powder.

Combine both mixtures; stir in blueberries.

Fill muffin cups 2/3 full. Sprinkle tops with coarse granulated sugar (such as turbinado) if desired.

Bake at 400°F for 20 minutes or less.

Makes 12 standard size muffins.

Great recipe, only difference with how i made them was i sprayed blueberries with water then dropped them in powder sugar, it helps the berries from just sinking to the bottom and adds a extra tiny bit of sweetness.

I have made these for years but I like your idea about the powdered sugar. My recipe says to shake them in flour. I have blueberries on my counter to make so am going to use the sugar instead.

I love this one. The best moist muffins. I just did a slight experiment with this and it turned out great. I added 2 tsp vanilla and used raspberries instead of blueberries then put it all into a 8-inch square cake pan. Then topped it with some sprinkled on brown sugar and cinnamon. Baked at 300°F for 40 minutes. Soooo yummy.
