CORNFLAKE CHICKEN 
8 skinned and boned chicken breasts
4 c. crushed cornflake crumbs
1 stick butter, melted

Roll chicken in melted butter and then roll in cornflake crumbs. Place in shallow casserole dish (ungreased) and bake for 45 minutes to 1 hour at 350 degrees (until chicken is golden and crunchy).

It could use a little added poultry seasoning (recommended in a similar recipe on this site), or something to bring out flavor. But it still turned out well - and it was so easy, a single guy like me could do it! :-)
