AUNT GLADYS' HAMBURGER & RICE CASSEROLE | |
1 (1 lb.) pkg. ground round beef 1 small onion, diced 1 (10 oz.) can Rotel tomatoes 1 cup dairy sour cream 1 cup quick-cooking rice, cooked (I use Minute) salt and pepper, to taste 1 tsp. garlic powder 1 1/2 cups shredded Monterrey or Colby cheese Preheat oven to 350°F. In medium skillet, sauté diced onion with ground beef; add salt, pepper and garlic powder. Cook until all color has left meat. Drain if needed. Add rest of ingredients except cheese. Stir well. Pour into a buttered casserole dish. Bake at 350°F for 30 minutes. Add cheese to top during last 5 minutes of cooking. Note: If you need to double the recipe, it works very well. Enjoy!
