AUNT GLADYS' HAMBURGER & RICE
CASSEROLE
 
1 (1 lb.) pkg. ground round beef
1 small onion, diced
1 (10 oz.) can Rotel tomatoes
1 cup dairy sour cream
1 cup quick-cooking rice, cooked (I use Minute)
salt and pepper, to taste
1 tsp. garlic powder
1 1/2 cups shredded Monterrey or Colby cheese

Preheat oven to 350°F.

In medium skillet, sauté diced onion with ground beef; add salt, pepper and garlic powder. Cook until all color has left meat. Drain if needed. Add rest of ingredients except cheese. Stir well. Pour into a buttered casserole dish.

Bake at 350°F for 30 minutes. Add cheese to top during last 5 minutes of cooking.

Note: If you need to double the recipe, it works very well.

Wow! This is an easy and delicious recipe that I would recommend to anyone who loves hamburger and rice. I made it with my kids and we all enjoyed it, even the picky eaters! It was so quick and easy to make. The only thing that could be improved upon is using more cheese, but that's just me. Gladys did a great job on this recipe.
