RICE AND GROUND BEEF CASSEROLE 
1 lb. ground beef
1 sm. chopped onion
1 c. converted rice
8 oz. tomato sauce
2 c. boiling water
Salt
Pepper
Sharp Cheddar cheese

Brown ground beef with onion and salt and pepper to taste. Add converted rice, tomato sauce and boiling water. Stir well and pour into casserole dish. Cover top with grated cheese.

Bake uncovered at 350 degrees for 20 minutes or until liquid is absorbed.

Nicely done with only a few ingredients. I thought it might be a bit bland without adding tons of seasoning, but it was very nice. The only change I made was substituting a packet of Lipton Onion Soup (which I had) for the actual onion (which I didn't) and I didn't know what converted rice was so I just used regular. Worked fine. All-in-all, a very nice dish. I shall be making it again.

I am trying to be creative with what I have in my cupboards and fridge until we can go grocery shopping so I had limited ingredients. When I came upon this recipe, I was happy to find that I had everything it called for. I added a beef bouillon with the boiling water to add a little more flavor and also some Italian seasoning and garlic powder. It came out pretty good and my family liked it pretty well. Nothing outstanding but still good for nights like this where I am just trying to do something different with Ground beef and with limited ingredients. It really needs something on the side with it like french bread or tortilla chips to eat with it.

We really liked it it was simple and easy to make. I added zesty tomato sauce and a can of chunky tomato sauce and layered on top of that Mexican cheese instead of the cheese suggested, it was so good! :)
