NEXT RECIPE:  SAUSAGE BALLS

SALTINE CRACKER TOFFEE
Saltines (crackers)
1 cup (2 sticks) butter
2 cups brown sugar
1 (12 oz.) pkg. chocolate chips

Preheat oven to 400°F.

Lay crackers side by side in 10x15-inch jelly roll pan (cookie sheet with edge).

Bring butter and sugar to boil and continue boiling until soft ball stage (234°F to 240°F on candy thermometer).

Pour toffee over crackers.

Bake in preheated oven for 5 to 7 minutes. Watch carefully so it doesn't burn.

Sprinkle chips over toffee/crackers and return to oven for another 30 seconds or until chips melt.

Cool to set and harden. Crack and enjoy!

Bulldog Variation: Substitute saltines for graham crackers!

Cooks Note: Use of a candy thermometer is recommended.

Saltine Cracker Toffee

Have been making these for years! The oven temp needs only to be 350°F. and pan to be in oven for 5 min (turn off oven). Need to spread the choc bits and o.k. to put in oven for 5 min. more to help melt. They are called Heath Bars and you can also sprinkle with nuts ---- use your imagination! Awesome for gift giving in decorated tins!

I call these Toffee Bites. I have been making them for years also, but use a little different method.I use 24 crackers layed side by side in a 9x13 pan, I melt the butter in the microwave, add the brown sugar, pour over the crackers. Place under the broiler until the sugar mixture bubbles. Remove from broiler and spread the chocolate chips evenly on top. they will melt as you are spreading them. Cool thoroughly, break into pieces. YUM!! P.S. Be sure to watch constantly while broiling, as the sugar mixture will burn quickly !

I just made these to take to a cookie swap tomorrow-they are outstanding! I made them exactly as the recipe called for and they turned out just great. My sister gave me a recipe that called for white sugar, but I decided to use the brown sugar and it worked really well. Will be on my annual list from now on!

I love making these, but I like to sprinkle pecan pieces on the top right after they come out of the oven, extra yummy!

I have made these for years too. But instead of the chocolate chips. I use butterscotch or white chips. The butterscotch are the best. Everyone loves them.

Any of above recipes but be sure to line cookie sheet with foil and grease well with butter. Foil removes easily after refrigeration.

Hi Fun2bemum,

Softball stage is when the sugar reaches 238°F on the candy thermometer.

I believe softball stage is reached when you put a small amount of the mixture in very cold water and when you pull it out, you can form a "ball" with it between thumb and forefinger. If too "melty" then you're not there yet!

I make these and use a pkg of choc chips and a pkg of peanut butter chips. I also use white sugar. I'm always getting requests for the recipe. Putting foil on the cookie sheet makes it easier to get the up. We call these "sweet and salties". I bake for 6 minutes at 350°F.

Simple, guests love it and they are amazed it was made with saltine crackers. It is a conversational recipe. Love it!

LOVE THIS RECIPE!! Had kids help make this for church Christmas events, they were a HUGE hit! The favorites seemed to be when we used the mint chocolate semi-sweet chips that are sold around the holidays, but all are yummy!
