TUSCAN SALMON 
3 (6 oz. ea.) salmon fillets
1 tbsp. olive oil (or more)
salt and pepper, to taste
3 garlic cloves
about 10 cherry tomatoes, sliced in half
2 cups spinach
3/4 cup heavy cream
1/4 cup grated Parmesan cheese

In large frying pan on medium heat add oil and salmon fillets. Season with salt and pepper and slightly brown. Remove fillets and set aside.

Add garlic cloves to pan and cook for about a minute. Then add sliced cherry tomatoes. Cook until they are getting soft, then add spinach until it wilts.

Add heavy cream and Parmesan cheese and put fillets back in pan to finish cooking, about 5 minutes. Add more salt if needed.
