“BAKED SALMON FILLETS” IS IN:

BAKED SALMON FILLETS 
2 tbsp. lemon juice
1/4 cup packed brown sugar
4 salmon fillets (fresh from market)
1 tbsp. butter, melted
4 thin slices lemon
8 tsp. brown sugar

Preheat oven to 375°F.

Pour lemon juice into ungreased rectangular baking dish, 11x7x2-inch; sprinkle with 1/4 cup brown sugar. Arrange fillets in dish; drizzle with butter. Bake uncovered 15 minutes; turn. Place 1 slice lemon on each salmon fillet; sprinkle with 2 teaspoons brown sugar

Bake until fish flakes easily with fork, 15 to 20 minutes longer. Serve with juices from dish.

We usually grill our salmon, but this was wonderfully prepared in the oven!!! Easy, delicious, moist and full of flavor!! I didn't put any brown sugar under the fish, only on top with a little extra butter and used lemon juice on top instead of lemon slices. Our guests raved about it, and we paired it with asparagus and garlic mashed potatoes-EXCELLENT!!

I am a horrible cook and this was an excellent recipe! it turned out great :) Once I put the brown sugar in the baking dish, i laid the filets in there and coated both sides before cooking. Still turned out great!

SO! My man friend was coming in town to stay with me for a few days. It was his first visit to see me. I was soooooo nervous and really wanted to impress him with my cooking.
