FAST HOMEMADE BROCCOLI CHEESE
SOUP FOR SUPER BOWL
 
You can do this from start to finish in just a few minutes, and it tastes TOTALLY homemade! Good enough for company! We serve in a bread bowl!

1 (22 1/2 oz.) can cream of chicken soup (family size)
3 tbsp. grated onion
2 tbsp. butter
2 cups shredded Cheddar cheese
3 cups milk
1 pkg. fresh or frozen broccoli florets, steamed until very tender

In a large pot, sauté onion in the butter. Over low heat: Add can of soup (undiluted) to pot and stir.

Add cheese and stir until thoroughly melted. Add milk and whisk until smooth. Add the broccoli and stir. Simmer until bubbly.

This is also even better using a package of mixed broccoli and cauliflower, steamed.

You may add two packages of broccoli if you like it really broccoli-y. I just buy the plastic bag of Mann's broccoli, poke a hole in it, and microwave the bag for 6 minutes to steam it perfectly! Then just dump it in!

After sautéing the onion, you can put all the ingredients into a Crock-Pot and cook, stirring occasionally, until bubbly.

I just tried this recipe and it was easy and very good. Cnowlin, I added cooked instant brown rice to mine and it turned out very good. I followed the recipe exactly but I found mine was soupier than I liked so adding the rice helped thicken it up some, next time I will have an extra bag of broccoli on hand!

Oh my goodness!! I just made this tonight. It was so simple and I loved it. My girls loved it too. All I had to do is add a little bit of salt and pepper and it was perfect! You can probably add some cooked chicken chucks to it too :-) yum! This is great. Thank you so much for sharing!

Absolutely amazing! This soup was so incredibly easy to make...an instant favorite for my whole family! When adding the milk, I just eyeball it until it is the consistency that my husbands likes (kind of thick). I probably use 2-2.5 cups instead of 3. Also, I have made this with and without the broccoli. My kids (ages 3 and 4) prefer to dip broccoli into the soup and my husband prefers it without. It is delicious either way, in my opinion!
