SPEEDY BEEF ENCHILADAS 
1 lb. ground beef
1 tsp. minced garlic
1 tsp. chili powder
1/4 tsp. salt
1/4 tsp. pepper
2 (10 oz.) cans enchilada sauce
6 (7 inch) tortillas
1 c. Cheddar cheese, shredded
1 c. Monterey Jack cheese, shredded
1 (4 oz.) can green chilies, chopped

Brown beef with garlic, chili powder, salt and pepper. Drain. Stir in 1 can sauce and 1/2 of the cheeses. Put beef mixture and chilies into the tortilla ad roll. Place seam side down in glass baking dish. Top with the rest of the sauce and cheese. Cover and bake at 350 degrees for 30 to 45 minutes; or microwave at 70% for 8 to 9 minutes, rotating once. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
