BASIC BLUEBERRY PIE FILLING 
4 c. fresh or frozen blueberries
1 c. sugar
3 tbsp. cornstarch or 6 tbsp. flour
1/2 tsp. grated lemon peel
1/2 tsp. cinnamon
1/2 tsp. grated nutmeg
1 c. water
2 tbsp. lemon juice

Mix dry ingredients in saucepan. Add water gradually. Bring to a boil, add blueberries and cook 3 or 4 minutes until clear and thickened, stirring constantly but carefully to prevent berries from crushing. Remove from heat, add lemon juice. Use in recipes calling for blueberry pie filling.

I had frozen blueberries that another recipe said to use twice as much, defrost and drain off liquid. I'd lose the blueberry juice! Cooking the berries with sugar and arrowroot (I'm allergic to corn) starch, saved all that yummyness! Bravo!

I used dark brown sugar and twice as much cinnamon. Made a frosting with vanilla pudding using whipping cream instead of milk and plenty of blueberry syrup in the frosting. Just had to stick the pie in the freezer for awhile before I could frost it. Tried to frost the first one before freezing. NOT a good idea. But it was sure fun to clean up that mess. The 2nd one was perfect.

Just made this pie filling with blueberrys from my bush. It was so very easy and we just finished the pie. OMG! Everyone raved over it! I did all but the zest but I dis use lemon juice. Next time I will get a fresh lemon. This is way better then any can. Next is to make a cheese cake and use this as the topping!!!!
