RECIPE COLLECTION
“CHICKEN AND BROCCOLI CASSEROLE” IS IN:

CHICKEN AND BROCCOLI CASSEROLE 
4 to 6 chicken breasts
1 to 2 (10 oz. ea.) pkgs. frozen broccoli
1 can cream of chicken soup
1 can cream of mushroom soup
1 tbsp. lemon juice
1/4 cup mayonnaise
1/3 cup butter
6 oz. grated cheese (any type)
bread crumbs to cover top of casserole

Cook chicken until tender. Cool. Take meat from bone and cube. Cook broccoli until done.

Heat together soups, lemon juice, mayonnaise and butter. Layer the chicken, broccoli and soup mixture in buttered casserole dish. Top with grated cheese and bread crumbs.

Bake at 350°F for 30 minutes.

I cooked this last night. My boyfriend and I both loved it! The only thing I did differently was I put it under the broiler for 2 minutes right at the end to make the breadcrumb top a little crunchy.

I cooked this tonight for my family. My kids and husband loved it! I do recommend fresh broccoli. I used left over baked chicken and cooked my broccoli the night before, all I had to do was prepare the sauce and bake.

Everyone loved this. My husband started the chicken cooking and added minced garlic, black pepper and soy sauce. I also used fresh broccoli.

Delicious. Made this for the first time last night to be put on the table for our thanksgiving spread. After finishing with the baking, my 3 yr old and I tried it..... Its really good. :) I'm not a big fan of lemon seasoning or juice in my food so i didn't use that. Nor did i use frozen broccoli, i bought it fresh. Anyhow, me and my daughter give this 2 thumbs up! A must try for your family. :)

Great recipe! I altered it slightly with what I had on hand - Broccoli Cheese soup and Cream of Chicken soup (both low fat), fresh steamed broccoli. I added a little sour cream to the mixture and some organic chicken broth to thin out the sauce. It could do without the butter. Very little leftovers so the family liked it!!!

I've cooked this for years and always add 8 oz of pasta - any kind but shells work best. It stretches the dish. If you need to loosen the sauce just use chicken broth (I use the broth I cook my chicken in). I've also added different spices depending on my mood from curry to dill to season all. I've never had anyone not really love this dish. I don't use the butter either.

This recipe is fabulous! I used one cup white long grain rice on the bottom of the pan. I cooked the rice first of course! Awesome recipe.

Way too salty! Must be the condensed soups and the cheese tend to make the recipe taste this way. Don't think I will ever make this one again....
