RHUBARB DREAM BARS 
CRUST:

2 c. flour
3/4 c. confectioners' sugar
1 c. butter

FILLING:

4 eggs
2 c. sugar
1/2 c. flour
1/2 tsp. salt, optional
4 c. thinly sliced rhubarb

Mix crust ingredients together and press into 15 x 10 pan. Bake at 350 degrees for 15 minutes. Combine eggs, sugar, flour and salt. Beat. Fold in rhubarb. Spread over hot crust and return to oven and bake 40 to 45 minutes longer. Cool. Cut into bars.

Makes 3 dozen bars.

I have searched high and low looking for this recipe as I lost my original. I have made this many times and it is an awesome way to use up eggs and rhubarb right from the garden. It also has minimal ingredients which is a plus. It tastes incredible and is my main go-to recipe for rhubarb. When I was given this recipe years ago in 2008 I was told it was called "Rhubarb Delight" but could not find it searching under that name. I did a search for rhubarb and 4 eggs and eventually found it posted here. I also remembered it calls for 4 cups rhubarb too. Thanks so much!

Loved these bars! I used an insulated 10x15 pan and sprayed it well with pam. I also had to add extra cooking time because of the type of pan I used. Came out of pan in perfect squares and tasted wonderful.
