RHUBARB DREAM BARS | |
CRUST: 2 c. flour 3/4 c. confectioners' sugar 1 c. butter FILLING: 4 eggs 2 c. sugar 1/2 c. flour 1/2 tsp. salt, optional 4 c. thinly sliced rhubarb Mix crust ingredients together and press into 15 x 10 pan. Bake at 350 degrees for 15 minutes. Combine eggs, sugar, flour and salt. Beat. Fold in rhubarb. Spread over hot crust and return to oven and bake 40 to 45 minutes longer. Cool. Cut into bars. Makes 3 dozen bars. |
