BAKED PENNE WITH TURKEY
MEATBALLS
 
1 (1.3 oz pkg) ground turkey breast
2 cups cornflakes, finely crushed
2 eggs, lightly beaten
3/4 tsp. Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper
1 (8 oz box) penne pasta
1 (26-28 oz jar) marinara sauce
1 1/2 cups reduced-fat mozzarella cheese

Heat oven to 400°F.

Line a baking sheet with nonstick foil. In a large bowl, blend turkey, cornflakes, eggs, seasoning, salt and pepper. Shape into 12 meatballs. Transfer to baking sheet.

Bake for 15 minutes. Turn and bake 15 more minutes. Cook pasta as directed. Drain.

Coat a 13 x 9 x 2-inch baking dish with cooking spray. Add pasta, toss with meatballs, marinara sauce, and 1 cup of cheese.

Scatter remaining cheese over dish, bake for 25 minutes.
