KIM'S MEXICAN MEATLOAF 
1 lb. lean ground beef
1 (15 oz.) can refried beans
1 egg
1/4 c. taco sauce or salsa
1/2 c. milk
1/2 c. crushed Ritz crackers
1 tsp. minced onion
1/8 tsp. pepper

In medium size mixing bowl beat egg slightly. Mix in onion, pepper and taco sauce. Add raw ground beef, mixing well. Add milk and mix thoroughly. Fold in crackers, then fold in beans blending all together well. Pat down firmly into bread or meat loaf pan. Top with a thin layer of barbeque sauce. Bake in 350 degree oven for 1 hour.
