QUICK AND EASY DINNER ROLLS 
1 pkg. active dry yeast
1 c. lukewarm water
1 egg
1/4 c. sugar
1 tsp. salt
1/4 c. oil or melted butter
3 c. flour, sifted

Better than biscuits, and easier to make, too!

Dissolve yeast in lukewarm water. Add egg, sugar, salt and oil (or butter).

Add half the flour, and beat until smooth. Add rest of flour and beat again until smooth. Fill greased muffin pans half full and let rise until double.

Bake at 400°F for 15 minutes. Brush tops with butter while still warm.

LOVE THIS RECIPE. It makes wonderful bread and you don't have to wait for it to rise. I just stuck it in a pan and it rose in the oven. My family loved it.

Have made this recipe 5 times in the last month. Very good and easy to do. I let my heavy duty mixer do the kneading. I roll into a ball in the palm of hands, works best if hands are either floured or graased. I let rise until double and then bake. I also top with melted butter before baking. Tastes like you've worked all day.

This recipe is so easy - I was surprised at how good they taste. I use gluten free flour and, as suggested by Karen above, brush the tops with melted butter before cooking.

The reason I tried them was because its not easy to find nice gluten free rolls to have with soups or stews and the recipe seemed so easy. I make them often now.

This is a great go-to recipe when you don't have the time or energy to make rolls the traditional way (and they actually taste better than rolls I have spent half the day making!). I was very pleased with this recipe. The dough got to be a little much for my hand mixer, but I was able to eventually get it smooth. I didn't let it rise for very long (maybe 20 or 25 min), but they still turned out good. The dough is workable with your hands, so I am tempted to shape them into small balls and bake on a baking sheet next time. All in all, great recipe!!

Wonderful! I used rapid rise yeast instead of active dry yeast, just to make sure I wouldn't have a problem with the rise. No problems at all. the rolls were great! The family loved them. And I didn't put them in muffin tins, I just placed them on a greased cookie pan. It worked fine.

Really good! I too was surprised. The dough is sticky, so after reading other comments I just buttered up my hands, rolled them in good sized balls and put them in the muffin tin. I let them raise about 40 mins then popped them in the oven. The texture is kind of rubbery..not sure if that is from over mixing them or what but the flavor is good. Very easy! Thanks for the recipe.

The rolls tasted great. I found out you can't beat the dough after putting in the second half of the flour. You really need to work it with your hands.

I googled "quick and easy" because I didn't have time to prepare a roll that needed rising time. So I just mixed, divided into little loaf balls, and put right in the oven on a greased cookie sheet. Because of my son's egg allergy, I exchanged one "Ener-G" egg replacer with the egg. I also handed kneeded the final cup of flour, because someone said it was chewy when overmixed. These were NOT chewy. They turned out GREAT! Oh, and I used 100% whole wheat. I stopped eating bread 5 months ago, but I wanted to taste a bit to see how they turned out...I'm now on my second one! (used butter instead of oil)

What GREAT luck!! First off I need to say that this is NOT the recipe I originally intended to make... I messed up the first recipe on Christmas Day & I NEEDED to find a quick recipe. I came across this by accident and what great luck. I didn't need an electric mixer...I did it by hand and it was in the oven while the bird was "resting". Because of this "accident" I got a new family favorite. my picky family LOVES this and wants me to make this on a regular basis. Thank you for posting this!

Tried this when snowed in and desperate for bread. The batter looked way too wet; I thought I'd messed up the recipe. Then, surprise, they not only worked, they were DELICIOUS. My 2 1/2 year old son who was a reluctant speaker piped up with "I like rolls!" and EVERYBODY in our house liked them too. Thanks!
