IRISH BATTER BREAD 
Serve HOT!

2 eggs
3/4 cup sugar
1 tsp. salt
2 tbsp. lard or shortening
1 cup raisins
1 tbsp. baking powder
3 cups all-purpose flour
1 3/4 cups buttermilk

Preheat oven to 350°F.

Beat all ingredients together until well mixed. Pour into a lightly greased 10-inch cast iron skillet and bake at 350°F for 1 hour.

Makes 8 to 10 servings.
