WAR CAKE
1 lb. raisins
2 c. boiling water
1 tbsp. baking soda
1/2 c. shortening
1 c. cold water
4 c. flour
2 c. sugar
1 tsp. salt
1/2 tsp. cloves
2 tsp. cinnamon
1 tsp. nutmeg
1 c. walnuts, chopped

Simmer the raisins and the boiling water for 15 minutes. Add the rest of the ingredients. Bake in a tube pan, at 325 degrees, for about 1 hour, or until well browned.

This cake is called "War Cake" because there are no eggs, butter, or milk among the ingredients, items often in short supply during war time. It is a family favorite, a very good cake.

We are studying WW2 at school and to end the topic we held a tea party. I made this cake with the children to serve and it went down a treat with parents, children and staff.
So delicious. Very 'moreish'. Can I have the recipe, they asked.

My great grandmother made this cake for the boys overseas ( ww I) then my grandmother made it for the boys overseas (ww II). I have carried the cake every christmas for my family. They demand that I make it. Recipe called for lard also and just raisins. We all love it.

My great grandmother would make this cake for me on my birthday; she would then tell me to never forget how hard things were during the depression and WW2. At my house, we make in on the fourth of July. How blessed we are that war has never touched our shores. Don't forget to frost this cake with burnt sugar frosting or cream cheese frosting.

This recipe has been in my family forever, however ours is a bit different. 1 box raisins, 2 cups sugar, 3 cups coffee, 2 tablespoons butter or Crisco. Bring to boil, simmer 10 mins. Cool completely. In bowl 3 cups flour, 1 teaspoon baking soda, cinnamon & salt, 1/2 teaspoon powered cloves & nutmeg. Bake at 300°F for 1 1/2 hours. Grease & flour pans. Makes 1 large Bundt, 2 loaves or 4 mini loaves. My recipe from family that lived in Kearny, NJ.
