KEY WEST BLACK BEANS 
1 lb. black beans
6 garlic cloves, peeled & stuck on toothpicks
1 med. green pepper, chopped
1 lg. onion, chopped
2/3 c. olive oil
2 bay leaves
1 tsp. salt (probably need more)
1 tbsp. vinegar
1 tbsp. sugar

Soak beans overnight. Cook in 1 quart cold water; boil 1 hour. Turn heat down low and add all ingredients except vinegar and sugar. Cook slowly for about 3 hours. Add vinegar and sugar in last 10 to 15 minutes of cooking. Serve on rice with chopped raw onion.
