PEANUT BUTTER FUDGE COOKIES (NO
BAKE)
 
1/2 stick butter
1/2 c. milk
2 c. sugar
1/3 c. cocoa
Dash of salt
Approximately 1/2 c. peanut butter (smooth or crunchy)
3 c. uncooked quick oats
1/2 c. chopped nuts BUT omit equal amount of oats if used

In 3-quart saucepan over medium heat, melt butter, add milk and let come to scald stage. Then add blended sugar, cocoa and salt, stir to melt. Bring to boil and boil ONE MINUTE ONLY. Remove from heat, stir in peanut butter to melt, add oats by cupful, stirring to coat after each. Drop onto wax paper. Work very fast after adding oats or mixture will "set up" on you. Be sure to omit oatmeal for equal amount of nuts or coconut, if added.

Best no bake recipe I have ever made! I used 2 cups of coconut and only 1 cup of oats as I did not have enough oats, it was wonderful!!! My whole family loves them.

Loved this recipe. I added 1/2 cup of cocoa rather than the 3rd cup called for plus a tsp. of vanilla. They were the best I have ever made!
