EASY BANANA BREAD 
1/4 cup (1/2 stick) butter
2 eggs
1 cup sugar
3 bananas, mashed
1 tsp. vanilla
1 1/2 cups self-rising flour

Cream together butter, eggs and sugar until smooth. Add bananas and vanilla; beat well. Mix in flour.

Bake at 325°F for about 1 hour or until golden brown.

I'd try about 4 tbsp. oil. Or you can use margarine/shortening (lard, Crisco, etc.).

I couldn't find my loaf pan, so I used an 11 x 8 baking pan. I used 3 eggs, added 1 tsp baking powder and 1/2 tsp baking soda, plus 1/2 tsp salt (I don't use self-rising flour). Baking time was over an hour, and I ended up turning the oven up to 340°F. It turned out dense, moist, and very good, but next time I'll add more sugar. I also added a cup of chocolate chips. Very good recipe with a little tweaking. 4 stars

In the oven now. I made cup cakes - half chocolate chip cinnamon and the other half pecan cinnamon. The batter tasted good lol - can't wait till they're done. Thank you for this recipe.

Many recipes do not refer to self rising flour. It is simple. I just wanted a base recipe that I could experiment with, so this one was great. Used it to make 'Banana Nut Raisin M&M Bread'. Thanks!

I have made this recipe many many times and is always a winner. I doctor mine up in my own way adding cinnamon and coconut as a staple and adding chocolate chips from time to time. My husband has taken it to work on occasion and someone always asks for the recipe. It always comes out moist and delicious. Definitely a keeper.
