CHOCOLATE COVERED PEANUT BUTTER
BALLS
 
1 (1 lb.) box confectioners' sugar
1 (16 oz.) jar creamy peanut butter
1/2 cup (1 stick) butter, melted
1 tsp. vanilla extract
2 (12 oz. each) bags chocolate chips

In a large bowl mix confectioners' sugar, butter, vanilla extract and peanut butter with spoon until creamy.

In a small bowl put both bags of chocolate chips and melt in microwave for 2 minutes until melted.

Take the mix and roll into small balls. After you roll mix into small balls dip them into bowl of chocolate until covered (toothpicks work great for this). Place on a cookie sheet.

Place cookie sheet in freezer for 1 hour. After the chocolate balls have hardened transfer them to a bowl and keep in refrigerator until ready to serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.

These are great, but it really makes a difference what kind of peanut butter and chocolate you use. Tried making them with a generic peanut butter and thought they were good. Switched to Skippy peanut butter (based on some online peanut butter taste test reviews) and the results were fantastic!

This recipe is excellent. The only thing I did different was put the mixture in refridgerator for awhile to make it easier to handle. I melted chocolate on stove and added parawax or you can add alittle lard to make the consistency of the chocolate smoother.

Love this recipe. One time when I was making it I didn't realize I was short 1 bag of chocolate chips and I had to go to the corner store because it was the only one open and they only had butterscotch chips so I tried it using 1 chocolate and 1 butterscotch and I won't make them any other way now.
