FUNFETTI JELLO (POKE) CAKE 
My husband's favorite cakes are a Funfetti cake and a Jello cake so I decided to combine the two. I used a Betty Crocker extra moist party rainbow chip cake mix.

1 pkg. party rainbow bits cake mix (Betty Crocker Super Moist)
3 eggs
1 cup water
1/2 cup vegetable oil
1 (6 oz.) pkg. any flavor Jello mix (I use strawberry)
1 tub Funfetti frosting (Pillsbury)
1 pint (2 cups) heavy whipping cream
1 cup confectioners' sugar
2 tsp. vanilla

Follow package directions for cake incorporating vegetable oil, eggs and water. Bake in two greased 9-inch rounds and let cool an hour. Cut the tops off to flatten.

Prepare strawberry jello according to package directions and let it set in the refrigerator for about 15 minutes to thicken (prevents it from getting mushy). After the 15 minutes pour over both cakes.

Whip in electric mixer: Pint of heavy whipping cream, vanilla and confectioners' sugar to make fresh whipped cream, then add in one container of Funfetti frosting. Mix until incorporates.

Note: The frosting isn't too sweet and should be very light and airy.

Refrigerate frosting until ready to frost.

Once the cake layers are cool, frost the entire cake and between the layers. Refrigerate for an hour before serving. Garnish with fresh fruit or candles.

Makes 1 (2 layer) cake.
