EASY MEXICAN CASSEROLE 
1 tbsp. olive oil
1 lb hamburger
1/2 package shredded Jack Cheese
6 tortillas
1 can black beans
1 can corn
1/2 chopped onion (optional)
1 can cream of chicken soup
1 can Rotel

Preheat oven to 350°F. Grease a 9 x 12 pan.

Cook the hamburger with the oil and onions. Mix the two cans of black beans and corn together. Mix the can of Rotel with the cream of chicken soup.

Layer the pan in the following order:

bean and corn mixture
hamburger
1/2 of the cheese
tortillas

Repeat layering until all ingredients are used. Pour the Rotel/chicken soup mixture on top of the last layer of tortillas.

Bake for 30 minutes.

Hi Jessica,

Rotel are a brand of canned tomatoes with hot peppers. You can make the equivalent yourself at home by adding some jalapeno or poblano peppers (for a mild version) or cayenne or Scotch bonnet for a hot version. Add a tiny amount at a time and taste; adjusting as desired.

I'm getting ready to make this recipe, and saw the question about how to make it without chicken. You can just make a sort of white sauce, in the "big fat cookbook" with veggie bouillon mix along with the milk. It has great flavor.
(Basically, it's : melt a T or so of butter in a small pan, add a little more flour, like 1-1/2 T, stir until it's all bubbly, add 1 c. milk and the bouillon.)

Made this... substituted cream of celery soup for cream of chicken, used crushed tortilla chips instead or tortillas and used chili ready canned tomatoes instead of rotel. Browned Hamburg drained and added taco seasoning. AMAZING! Served with shredded lettuce, onions and sour cream. Family raved!

There are two kinds of tortillas there is flour, (like those flat bread things) and there is corn, (things like Doritos and taco shells are basically fried corn tortillas). I have made this with both kinds and both are fantastic! This is equally good with shredded chicken instead of hamburger too!

Tasty and easy. It was too spicy for the kids because of the green chiles in the Rotel. Next time I might try using diced tomatoes minus the chiles. You can always add hot sauce to it once served if you like a little heat.
