MEXICAN CORNBREAD CASSEROLE 
1 can cream corn
1 can whole corn
1 large onion
1/2 of an 8 oz jar of diced jalapeno peppers
2 1lbs bags shredded cheese
1 1/2 to 2 lbs. cooked hamburger meat drained
2 eggs
milk
2 packages yellow cornbread mix

Brown and drain hamburger meat. Dice onion. Mix cornbread mix according to the package. Add all the ingredients in a large mixing bowl. Mix well. I use my hands to get it all mixed together well. Place in a large cake pan and cook on 350°F for at least 45 minutes. This may take longer, depending upon the way your stove cooks.

I added a can of green chilis and used shoepeg corn ....instead of yellow corn! I also added 2 extra eggs to make it fluffy plus garlic powder and taco seasoning. But it is so so good!

I use these same ingredients, but put them together quite differently. I put half of the cornbread mixture into hot cast iron skillet, layer hamburger meat, onions, cheese and peppers. Pour rest of cornbread mix on top. Cook until brown.

Edna, layered is the way I always make this dish also. I use two cans of creamed corn and the peppers go in the skillet with my hamburger. This is a great dish. I've never had anything but compliments!

I added taco seasoning to the meat and did what Edna (Virginia) did and put half the mixture on the bottom and layered ingredients. Cornbread mixture, meat, sliced potatoes(boiled in the microwave til soft), cheese, and the rest of the mix on top. I used a round cake pan sprayed with Pam and it was REALLY pretty!

I just made this and am wondering how anyone fit it into a round cake pan? I had to put it in a 9 x 13 pan and it barely fit into that. Any tips are greatly appreciated! Can't wait for it to come out of the oven.

Instead of the cream and whole kernnel corn I used 2 cans of mexican corn. I also added kidney beans and a pack of taco seasoning. I too layered it. Family just loved it.

I have made this recipe so many times and just absolutely love it. I do use a large onion but mince it in a food processor. I also use green chiles instead of jalapeņos.
