GRANDMA Q'S AUTHENTIC HALUSHKI
FROM PENNSYLVANIA
 
1 lg cabbage head, chopped
2 lg sweet onion or yellow onion, chopped
2 crushed garlic cloves, chopped
bacon grease about 6-8 slices of bacon
1 stick sweet salted butter (add more as needed - 1/2 stick)
12 oz wide egg noodle
salt and pepper

Remove first layer of cabbage only and cut around core, leaving core out of recipe.

Lightly sauté 8 slices of bacon (for the drippings). Remove bacon once done, (do not burn bacon) then sauté onions, garlic and cabbage with bacon drippings with 1 stick butter.

Cook until cabbage has a soft texture. add bacon (this is optional). Add 1 tablespoon of Kosher salt and 1 tablespoon of freshly ground black pepper, add more to taste.

In a separate pot, boil noodles for about 7 minutes (less than al denté).

Once noodles are done, drain and add to cabbage mixture and remove from heat.

Halushki was traditionally used for meatless meals, so bacon was never in the recipe. For black fasts (no dairy products or meat), you would use vegetable oil instead of butter.

Yes Ellen you are correct no meat in traditional Halushki, I guess I wrote that for the people who would have just thrown out the bacon and not thought to save it for another recipe... :-)

Thank you so much, Tina. Moved from Allentown area to Indiana a few years back and was sure I had a Halushki recipe but couldn't find it anywhere. This recipe is exactly right for what I remember! Tears of joy!

This was so delicious. Thank you for sharing the recipe. I used Pancetta instead of bacon. I can't wait to make it again with other flavors of bacon. My picky daughter who doesn't like noodles even ate it.

Even though it's supposed to be a meatless dish, I add sliced kielbasa and potatoes while sauteeing the cabbage/onion/garlic so that I have a hearty meal for my meat-lovers family.

The recipe clearly states REMOVE BACON. You are to use the grease from the bacon ("drippings").

I am originally from Pittsburgh and this recipe brings back many fond memories. On Fridays my mother would make pierogies and halushki. Makes my mouth water just thinking about it.

This is so similar to what my mother made. We called it "cabbage mess". Nobody in our family from PA though, mom's mother was a southern cook, we always assumed it was a southern dish. We add broccoli, and use a whole pound bacon. Yum! So tasty but unhealthy with so much bacon and fat.
