FRIED APPLE PIES 
3 lbs. cooking apples (Paula Red or Granny Smith work best)
2 c. sugar
2 tbsp. cinnamon
3 cans Texas style biscuits
Confectioners' sugar

Peel and core apples; cut into thin slices. Place in a large cooker. Add enough water to barely cover apples. Add sugar and cinnamon. Bring to a boil over medium heat. Cook until tender. At this time do a taste test. Add more sugar and cinnamon if desired. Continue cooking until it is the consistency of pie filling.

On a floured surface, roll out biscuits individually until very thin. (It is best to do no more than six at a time). Place approximately 2 tablespoons of apple mixture in the center of each biscuit. Fold over and press edges together firmly.

Pour approximately 2 cups of vegetable oil into an electric skillet. Heat until 300 degrees. Place pies in oil. Fry until golden brown on both sides. Remove from skillet and place on paper towels to drain excess oil.

If necessary, add more oil during frying. Let cool. Drizzle on glaze. For glaze, take 1-1 1/2 cups confectioners' sugar and add enough milk to make it thin enough to drizzle on pies. Makes approximately 30 pies.

I just made this recipe, they are wonderful and very easy to make.I did have a little problem with the apples being a little to running but I just drained the juice off the apple before I put them in the biscuits.
