SUE'S MEATLOAF 
1 to 1 1/2 lb. ground beef or meatloaf mix
1 cup chopped peppers (I like a mix of different colors)
1 cup chopped onion
1 (10 oz.) can condensed tomato soup
1 cup herb stuffing mix (Pepperidge Farms)
1 egg, slightly beaten
1 cup shredded sharp cheddar cheese
1 tsp. salt
1 tsp. ground pepper
ketchup, for topping (optional)

Preheat oven to 350°F.

Mix all ingredients in large bowl Pack into a loaf pan (or 2).

Bake at 350°F for 45 minutes to 1 hour or until it pulls from sides and top is brown. Let cool slightly.

Slice and serve. Add ketchup to top, if desired.
