“TAMALE PIE CASSEROLE” IS IN:

TAMALE PIE CASSEROLE 
1 1/2 lb. ground beef hamburger
1 medium sized onion, chopped
2 cups stewed tomatoes
1 small can tomato sauce
2 cups whole kernel corn
1 cup sliced ripe olives
1 tsp. salt
1/4 tsp. pepper
1 tbsp. chili powder
1 clove garlic, minced
1/4 cup chopped green pepper

Brown ground beef and onion. Add tomatoes, sauce, corn, olives, green pepper and seasonings and cook for about 20 minutes. Pour into well greased 8x12-inch baking dish or large casserole dish.

TOPPING:

1 1/2 cups milk
1/2 cup cornmeal
2 tbsp. butter
1 tsp. salt
2 eggs, lightly beaten
1 cup shredded cheese

Mix milk, cornmeal, butter and salt; cook until thick. Add the eggs and cheese; e mix well and pour over meat mixture. Bake until top is browned at 350°F, about 45 minutes to 1 hour.

This casserole was delicious! I have been looking for a good Tamale Pie recipe and this one hit the spot. I used ground turkey instead of the ground beef, also I had no green pepper on hand, so I used a small can of diced Ortega green chilies which worked very well. I also added some seasonings, no salt mix from Costco, also worked out really well. Thanks!

I used Rotel tomatoes instead of stewed, gave it a nice kick. Topping didn't seem to be enough, next time I will make more. Over all great recipe.

For the topping, my mom used crushed tortilla chips or Doritos and sprinkled with cheese. It's wonderful! I also use mexicorn, cuts out having to use green pepper. I don't use olives, but kidney beans are a great addition. Also, no stewed tomatoes, just tomato sauce. Lastly, I flavor the hamburger with taco seasoning... must try!
