CORNBREAD DRESSING 
2 pkgs. Mexican cornbread mix
2 pkgs. yellow cornbread mix
6 boiled eggs, chopped
1 c. onions
1 c. bell pepper
1 c. celery
2 c. cooked rice
3 cans chicken ala king
2 tbsp. black pepper
1 tbsp. salt (or to taste)
6 raw eggs
1 lg. baking hen
1/4 c. sausage seasoning (or to taste)

Boil hen and debone. Reserve broth. Mix cornbread according to directions and bake. When done, crumble cornbread and add to sauteed onion, bell pepper, celery and boiled eggs. Add the chicken ala king, sausage seasoning, rice and chicken broth to cornbread mix. Fold the chicken in. Spread small amount of butter on top of dressing and bake at 350 degrees until well done.
