RECIPE COLLECTION
“HAM AND LENTIL SOUP” IS IN:

HAM AND LENTIL SOUP 
1 cup brown lentils, rinsed, drained
1 cup chopped celery
1 cup sliced carrots
1/2 cup chopped onion
4 cups chicken broth
1/2 tsp. lemon peel
1/4 tsp. cayenne pepper
2 minced garlic cloves
1 cup chopped ham, (leftover cooked ham is fine)
2 cups chopped fresh spinach

In a 3-1/2 to 4-quart slow cooker, combine lentils, celery, carrots, and onion. Stir in broth, lemon peel, cayenne pepper, and garlic. Cover, cook on low for 7-8 hours or on high for 3-1/2 to 4 hours.

If using low setting, turn to high heat setting, add ham to cooker. Cover, cook for another 10 minutes.

Stir in spinach.

A very hearty, healthy, tasty soup.

We left out the spinach mainly because we didn't have any. We replaced with cubed potatoes. The soup was super easy. About 10 minutes of prep. We put it in a crockpot for 8 hours in the morning and when we got home from work, dinner time. It was very good, can't wait to have it for lunch tomorrow.

I have never written a review about a recipe before but this one is so wonderful that I decided to as I'm preparing it again today! It's super easy, inexpensive and healthy! I also leave out the spinach since we're not big fans of it. I cook mine on high and in 3 1/2 hours it's warm and ready to eat! Delicious on a cold winter night by the fire with french bread!

Delicious and easy. I adjusted it just a bit adding one cup instant brown rice in the last five minutes of cooking and substituted spinach for coarsely chopped fresh kale. So good!

This sounds great! I'm on a no salt diet and it's hard to make food taste good for me. This soup sounds so good, I will make it today. I think the lemon is the key to a no salt diet.
