WHOLE WHEAT YOGURT PANCAKES WITH BLUEBERRIES | |
1 cup whole-wheat flour 1 cup all-purpose flour 2 eggs 1 (6 oz.) tub lemon flavored yogurt 1 tsp. vanilla 1 1/4 cups milk 1 tsp. baking soda 1 tbsp. vegetable oil 1 1/2 cups blueberries Add all the ingredients except for the blueberries into a KitchenAid mixer and blend for two minutes. Use the lowest setting with the mixing paddle. Prepare the griddle at 400°F. Lightly coat the griddle with non-stick baking spray (Pam with flour). When the batter is mixed and ready put 6 to 8 blueberries on the griddle in several separate piles. Pour the batter on top of each pile. Watch the edges and flip after a minute or so. Note: I didn't see mine bubble much in the middle, but mine did get lightly browned. Serve with your favorite syrup. Enjoy! Submitted by: Vernon |
