BAKED SHRIMP 
12 jumbo shrimp
1/2 lb. scallops
4 tbsp. butter
1/4 tbsp. paprika
2 tbsp. crushed potato chips
1/4 c. cracker meal
3 tbsp. grated Parmesan cheese
1-2 tbsp. cooking sherry (optional)

With sharp knife, cut shrimp through meat from underside but not shells. Devein and wash. Put toothpick under meat but over shell at both ends to keep shrimp flat. Chop raw scallops and fill into shrimp. Melt butter; add paprika and cook 10 minutes.

Combine with crushed chips, cracker meal and cheese. Cover shrimp with this mixture and place in a shallow baking dish with a little water in the bottom. Bake about 20-25 minutes at 350 degrees.
