FRESH APPLE CAKE 
1 c. cooking oil
2 c. sugar
3 c. flour
2 eggs
1 c. chopped nuts
1 tsp. baking soda
2 tsp. vanilla flavoring
1/2 tsp. salt
3 c. chopped fresh apples, peeled

Combine cooking oil and sugar. Add well beaten eggs and vanilla. Measure and sift together flour, salt and soda. Add dry ingredients to first mixture. Stir in chopped fresh apples and nuts and combine thoroughly with above ingredients.

Pour into tube or oblong 13"x9" pan and bake in 325 degree oven until done, approximately 65 minutes.

CARAMEL GLAZE FOR FRESH APPLE CAKE:

1 c. brown sugar
1/2 c. butter
1 tsp. vanilla
1/4 c. cream or evaporated milk

Place butter and sugar in double boiler and allow to melt; blend well. Add cream (or evaporated milk) and bring to a full boil. Cool and add vanilla. Spread evenly over cooled cake.

This is an easy recipe with good results. The cake part itself is very good and moist. It probably could have done without the caramel glaze on it. It tastes good but it is too rich. The cake part would be good to eat on a crisp fall morning with coffee. Maybe next time I'll just leave the glaze part off and add cInnamon to the recipe.

This is exactly the recipe my grandmother made - even worded exactly the same and ingredients in the same order. She died in 1985, so I wonder where this originated as it has been around for probably 50 years since I ate it at her house many years before she died. It always reminds me of fall.
