CORNMEAL GRIDDLE CAKES OR PANCAKES | |
![]() 1 1/3 c. cornmeal 1 1/2 c. boiling water 1 tbsp. melted butter, butter or shortening 3/4 c. milk 1 tbsp. table molasses 2 eggs, well beaten 2/3 c. sifted flour 1 tsp. salt 4 tsp. baking powder Let the griddle heat slowly. Pour the boiling water over the cornmeal and mix well, then let cool slightly. Add the melted butter, butter or shortening, milk, molasses and eggs and mix thoroughly. Sift the flour, salt and baking powder together and stir into the cornmeal mixture quickly. Drop by spoonful on the hot griddle. Brown on one side then turn and brown the other side. Serve piping hot. |
