TINA'S ARROZ CON POLLO
"ITALIANO"
 
4 chicken breasts
1/4 to 1/2 cup olive oil
1 tsp. Goya Adobo seasoning (add more if desired)
1 box chicken broth
3 bags boil in bag rice (cut open bags as they will not be used)
1/2 can diced tomato
1/2 tsp. turmeric
1/2 tsp. oregano

Arrange chicken in one layer in greased baking dish. Sprinkle the Adobo seasoning over chicken. Drizzle olive oil over chicken. Bake in a 400°F oven for about 20 minutes then add sauce on top of chicken spreading it over evenly continue to bake for another 10 to 15 mins.

While chicken is baking pour 1 box of chicken broth into large saucepan, pour in 3 bags of the rice and throw away bags. Bring to boil then add turmeric, oregano and diced tomato and continue boiling slowly and stirring frequently, until rice is tender and liquid is absorbed.

When done put rice in a large platter and place chicken on top.
