ZUCCHINI FRITTERS 
5 tbsp. Bisquick
1/2 c. Parmesan cheese
1/4 tsp. salt
1/8 tsp. pepper
2 eggs
2 tbsp. butter
2 c. grated zucchini

Blend the Bisquick, Parmesan cheese, salt and pepper; add the eggs. Grate the zucchini and add to the mixture making a batter. Melt 2 tablespoons butter over medium heat and pour batter into pan by tablespoon like hot cakes. Fry 3 minutes on each side. Serve while warm or eat cold. Makes 8 to 10 fritters.
